For the Record

Besides the Profile as an Introduction:

I will share that I have been studying food and cooking, with care, since 1997. For the record there are a few recipes, which will make it here soon, that are near and dear to my heart (thanks Mom) and some that are just accidents or random creations.

My philosophy is that nothing is impossible when it comes to seasoning.

My favorites are: dried herbs (fresh is a waste when cooking in small quantities), nice fish, BIG steaks (Santa Maria style), and Kosher salt (but I'm not against sea salt).

And a formal rule of thumb is that food never needs seasoning once it hits the table (faux Pah), the point is to do that in the kitchen while cooking (note: later discussion of super-saturation)

Me: 50 Ways to Make Chicken (#7)

Thanks to the connivence and packaging from Costco, chicken is a weekly menu item. Please enjoy and adapt the following recipe. For the record, your attempts will likely touch into the realm of something I've already tried : )

Main Purchase:
Package of Chicken Thighs

Seasonings:
Onion Flakes, Garlic Powder, Salt, Pepper, Chili Flakes, Chipotle Powder, Oregano, Lime Juice

Prep:
Wash Chicken.
Place Chicken in a Bowl
Apply Lime Juice (essentially spray the chicken with juice)
Sprinkle Light Coating onto Chicken:

Salt, Chipotle Powder, Oregano
Wrap a Tray in Tin Foil (optional) and:
Repeat Seasonings ADDING Onion Flakes onto foil
Place Chicken (Stir in Bowl First) onto foil

Cook:
Place rack at mid-level
Set Broiler to High
Cook for ~10 minutes on first side (or brown)
Flip and Cook for ~5 minutes on opposite side
